Created in The Cornish Fishmonger's Kitchen by an experienced, award-winning chef - our Thermidor Sauce is a buttery and creamy sauce, carefully crafted with fresh seasonings, flavours and of course white wine! 

With simple cooking instructions included, we've made it really easy to create this delicious dish.

2 x Lobsters, cooked and split (450 - 600g start weight)

Typically feeds 2 as a main course, or 4 people as a starter.

We are dependent on market landings with can be affected by seasonality and the weather. This means on rare occasions we may have to send you frozen Lobster which will arrive partially-defrosted, or from other reputable suppliers outside of Cornwall.

All weights stated are live start weights. After we have cooked and prepared your Lobster for you, please expect around 80% of the start weight. This equates to a minimum of 360g and a maximum of 480g for a small Lobster.

There are lots of variables which affect the amount of meat inside each lobster. As they were living beings every single one is different. However as a rule of thumb we would normally expect a 20%-25% yield of meat.

The Thermidor Sauce will be dispatched frozen, and will begin to defrost in transit. Therefore, might not be suitable for home freezing.

On rare occasions, we may have to send you a whole lobster (as opposed to split) or Lobster sourced from trusted suppliers from outside Cornwall. However, we will endevour to inform you if this is the case.

Storage & Preparation

Consume within 4 days of delivery, must be kept refrigerated.

In some cases, this product may be dispatched frozen and begin to defrost in transit. Therefore might not be suitable for home freezing.

The green/grey or red creamy substance in the body cavity of your lobster is called tomalley.

It's perfectly safe to eat and makes a great addition to seafood sauces.

It's a more intense flavour than the sweet meat of the lobster claw or tail and is often considered a delicacy.
